Christmas Eve Dinner

My family came over for dinner. No traditional feast here. On the menu: Mimosas, fresh fruit platter, cranberry salad, Holiday French Toast, church potatoes, bacon and sausage.

Holiday French Toast

1 ½ C. Brown Sugar

12 T. Melted Butter

8 Eggs

1 ½ C. Milk

1 t. Vanilla

1 Loaf of Challah Bread, cut into 1-inch slices

6 t. Cinnamon

4 Granny Smith Apples, peeled and sliced

½ C. Dried Cranberries

1 C. Chopped Pecans

Combine brown sugar, butter and cinnamon in a 9x11-inch dish. Add apples, cranberries and pecans. Toss well to coat. Spread mixture evenly over bottom of dish; arrange bread on top. Mix eggs, milk, vanilla and 1 tsp. cinnamon and pour over bread; soaking completely. Cover with foil and refrigerate overnight (3-12 Hours).

Preheat oven to 375 degrees. Bake for 45 minutes covered; uncover and bake for an additional five minutes. DO NOT place cold baking dish in hot oven. Remove from oven and let stand for five minutes.
