Grilling Out

Nice weather is here and we've been cooking out on the grill several times a week now. I love a good steak and my favorite accoutrement would be grilled potatoes. Earlier in the week we had potato packets and tonight we had wedges.

Potato Packets

1 large baking potato, per person
Seasonings
Parmesan Cheese
Butter
Aluminum Foil
Cooking Spray

Tear off a piece of aluminum and coat with cooking spray. Peel and dice potatoes and place in the center of the foil. Season (I used garlic salt, pepper, cayenne and parsley). Sprinkle with parmesan cheese and dot with butter. Fold up aluminum and toss on a hot grill for 20-25 minutes.

Potato Wedges

1 large baking potato, per person
Seasonings
Canola Oil
Ziplock Bag
Grill Basket
Cooking Spray

Wash potatoes well and cut into wedges. Toss into a ziplock baggie and add enough oil to coat the potatoes. Season to your liking and toss to coat the wedges. Spray your basket before adding potatoes. Cook on the grill with indirect heat, 30 minutes or until tender.

I still prefer the packets better. They did not dry out like the wedges did. Maybe the wedges would have been better off in foil...but I wanted to use the grill basket as I had bought it a year ago and still had not used it.

  1. I so want to try the potato packets tonight but I'm fairly certain I'm out of parm cheese. I just added it to my shopping list. :)

  2. mmm... that's too bad the wedges got a little dry. Maybe putting some seasoning, oil and a splash of vinegar into a spray bottle and spraying that on while they are on the grill would help it out? just a thought!
