Banana Nut Bread

Ellie found some ripe bananas on the counter and took a bite out of one, so I decided to make some banana nut bread with streusel-nut topping. It's so yummy.

Bread ::
2 C. flour
1 1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/4 t. ground cinnamon
1/8 t. ground nutmeg
2 eggs, beaten
1 1/2 C. mashed, ripe banana
1 C. sugar
1/2 C. cooking oil
1/4 C. chopped walnuts

Streusel-Nut Topping ::
In a small bowl combine 1/4 C. packed brown sugar and 3 T. flour. Cut in 2 T. butter with a pastry blender. Stir in 1/3 C. chopped walnuts.

Preheat oven to 350 degrees. Grease one 9x5-inch loaf pan; set aside. In a bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg; set aside.

In your mixing bowl combine eggs, banana, sugar and oil. Add flour mixture all at once. Stir until moistened but lumpy. Fold in walnuts and spoon into prepared pan. Top with Streusel-Nut Topping.

Bake for 55-60 minutes. Cover loosely with foil for last 15-minutes to prevent over-browning. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool completely.
