2.5 lbs. potatoes, chunked
4 T. butter
1/2 C. onion, chopped
2-3 T. flour
1/2 t. garlic salt, pepper and cayenne (to taste)
1 pkg. Bacon Pieces (or some strips of fresh bacon)
1 C. shredded monterey cheddar cheese
14 oz. chicken broth
1 pint heavy cream
sour cream & chives (optional garnish)
Boil potatoes, fork tender-not mushy, and drain. Saute onions in butter. Thicken roux (butter and onions) with flour. Add chicken broth and cream. Fold in potatoes and cheese. Add bacon. Simmer for 10-20 minuters.
Garnish with extra bacon, cheese, sour cream, chives, etc.
