Cinnamon Apples & Pork Chops, Redux

Grant is an eating machine. Most days, I nurse him until dinner time and then he eats with us at the table. He currently eats 3 oz. of fruits and 3 oz. of veggies plus cereal for dinner and then nurses again before bed. (On days that I have to teach, he eats all meals by spoon and then nurses like mad in the late afternoon and evening - 3 oz. fruit and cereal for breakfast, 3 oz. fruit and 3 oz. veggies plus cereal for lunch.) With that said, we're running low on frozen baby food and sadly, the growing season for fresh produce has come to an end as well. Some things I can buy fresh/frozen at the store, but I love to buy 1/2 pecks of apples or peaches at the Farmers Market. Grant typically eats peach sauce or apple sauce (we're out of everything else - mangoes, cherries, etc.) so I stopped last night to pick up peaches, but they're all gone. Apples, however, are aplenty!

I always borrow my Mom's colander, but she is making her own batch of applesauce so I decided this morning to try my hand at Crock-Pot Applesauce. While poking around the internets this morning, I read about apples being one of the members of the "dirty dozen."
(Sounds like a gang, doesn't it?) I've always made my applesauce with skin-on, just like my mama does because "That's where all the fiber is!" I never thought about buying organic apples. I just thought I was doing my babies a favor by making their food. Hmmpf. Guess not.

1/2 peck of MacIntosh Apples
1/2 C. water (or cider if you wish to make apple butter, instead of sauce)
1/2 C. brown sugar
2 t. cinnamon
2 t. vanilla
dash of nutmeg & cloves


Since I didn't have a colander, I needed to peel my apples and core them before cooking. Using the Crock-Pot also meant that I didn't forget about the apples on the stove and letting it A.) boil over or B.) water evaporated and the apples burned the bottom of my pan or C.) hand wash Mom's antique colander and wooden smasher-thing.**

I put everything in the Crock-Pot and have let it cook on high (you should cook it on LOW, but I'm running out of time before dinner). I've opened it up a few times to stir, about once an hour - 90 minutes. Cook up to 8 hours on low or until you've reached your desired consistency. We'll eat it chunky for dinner, but for Grant I'll blend it into a puree with our handy dandy Magic Bullet. You could also use a blender or food processor. I just happen to have a MB that sat in the cupboard collecting dust for 8 years before it ever saw the light of day. MIL is a sucker for infomercials! I was so close to donating the box to Good Will, but decided to give it a try when making baby food for Ellie.

For the pork chops, I haven't decided how I'm going to cook them, since the apples are in the Crock-Pot. Usually, I'll make the whole meal in one skillet. (In a large skillet over medium heat, cook pork chips in 1 T. butter for 4-5 minutes on each side or until a thermometer reads 160 degrees...) Or, I might pan fry them tonight, but last time I did that, I wound up with 17 burns and blisters on my thigh from hot, splattering grease :o/

Homemade Ice Cream

We spent the weekend poolside. Saturday night we all enjoyed chicken enchiladas together and then my Mom (Gigi to my kiddos) made a chocolate cake with homemade strawberry ice cream - the kind you have to hand crank. It was the best dessert I've ever tasted. Seriously. It was that good.

Hot Buttered Pretzels



I pinned these on Pinterest a while ago and made them today. Time consuming, but delicious! Now I need to find a yummy, spicy cheese to dip them in!

The recipe can be found at KingArthurFlour.com I followed it exactly, except I used salted butter at the end and barely dusted them with kosher salt. Perfection!

P.S. I want to try Sarah's pretzels the next time.

Easy Peasy Chicken Salad



Boneless, skinless chicken breast
EVOO
Salt & Pepper

Rinse and pat dry your chicken. Place on a cookie sheet lined with parchment paper. Drizzle with a little bit of EVOO and then season with salt & pepper. ((I had a whole breast and roasted it for an hour at 350*)) Let rest and then chill in the refrigerator.

When you're ready to make your chicken salad, you'll need:

Chicken breast, cut into small cubes
Diced celery
Red Grapes
Mayonnaise
Cayenne Pepper

Throw everything into a bowl ((my grapes were tiny, so I left them whole...you could halve them if need be)) and toss to coat. Season with cayenne for just the right amount of spice!

Dried cranberries and almonds or pecans/walnuts would be yummy too...I just didn't have any on hand.

Serve with crackers or on a croissant, toasted bread, etc.

Swiss Stuffing Chicken

This is super yummy and only has four ingredients! Enjoy!



Boneless, skinless chicken breast
Chicken-flavored stuffing
Cream of chicken soup
Swiss cheese (I only had Muenster cheese and it worked well)

My chicken was still frozen a bit so I par-boiled it to help speed up the baking time. Place chicken breasts in a greased casserole dish. In a small bowl combine stuffing and soup. Pour over chicken (you may need to add a bit of milk...) and cover with slices of cheese.

Bake at 350* for 30 minutes, covered. Uncover and bake for another 10 minutes. Serve with green beans or your favorite vegetables.

Banana Nut Bread

Ellie found some ripe bananas on the counter and took a bite out of one, so I decided to make some banana nut bread with streusel-nut topping. It's so yummy.


Bread ::
2 C. flour
1 1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/4 t. ground cinnamon
1/8 t. ground nutmeg
2 eggs, beaten
1 1/2 C. mashed, ripe banana
1 C. sugar
1/2 C. cooking oil
1/4 C. chopped walnuts

Streusel-Nut Topping ::
In a small bowl combine 1/4 C. packed brown sugar and 3 T. flour. Cut in 2 T. butter with a pastry blender. Stir in 1/3 C. chopped walnuts.

Preheat oven to 350 degrees. Grease one 9x5-inch loaf pan; set aside. In a bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg; set aside.

In your mixing bowl combine eggs, banana, sugar and oil. Add flour mixture all at once. Stir until moistened but lumpy. Fold in walnuts and spoon into prepared pan. Top with Streusel-Nut Topping.

Bake for 55-60 minutes. Cover loosely with foil for last 15-minutes to prevent over-browning. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool completely.


Loaded Baked Potato Soup

2.5 lbs. potatoes, chunked
4 T. butter
1/2 C. onion, chopped
2-3 T. flour
1/2 t. garlic salt, pepper and cayenne (to taste)
1 pkg. Bacon Pieces (or some strips of fresh bacon)
1 C. shredded monterey cheddar cheese
14 oz. chicken broth
1 pint heavy cream
sour cream & chives (optional garnish)



Boil potatoes, fork tender-not mushy, and drain. Saute onions in butter. Thicken roux (butter and onions) with flour. Add chicken broth and cream. Fold in potatoes and cheese. Add bacon. Simmer for 10-20 minuters.

Garnish with extra bacon, cheese, sour cream, chives, etc.

A Cry for Help

I do all the meal planning and grocery shopping. I try to have dinner ready or started by the time Aaron gets home. He's a good helper in the kitchen and our grill master. But I get sick of picking and choosing what we're going to eat. I ask for suggestions and Aaron always offers up - tacos or spaghetti. He grew up in a meat and potatoes family. Salads are not considered dinner. Our weekly menu usually looks like this - tacos, spaghetti, chicken, steak, order pizza, pancakes, etc.

SO...I'm asking for suggestions. Please, come out of the woodwork and leave a comment/link (or two!) with your favorite meals and recipes. It'd be greatly appreciated.

Teriyaki Chicken Sandwhiches

Chicken Breasts
Lawry's Teriyaki Marinade
Pineapple Slices
Swiss Cheese
Ciabatta Bread, sliced

Lettuce
Tomato
Mustard
Mayonnaise

Clean chicken breasts and cut down into bun-size patties. I had 3 large chicken breasts which made 6-7 chicken patties. Marinade for 1 hour. Grill chicken and baste with marinade. Grill pineapple slices. When done, assemble chicken patty and a slice of swiss cheese on a parchment paper lined cookie sheet. Melt cheese under broiler. Assemble sandwiches with favorite toppings and grilled pineapple slices. Enjoy!

Cheerio Bars

3 Tbs. Butter
1 bag Marshmallows
6 C. Multigrain Cheerios

Melt butter in a large saucepan or dutch oven. Add marshmallows and stir until melted. Add Cheerios and stir to cover with marshmallow mix. Pour into a greased 9x13 pan. Let cool.

Cheesy Potatoes

1 32-ounce package Hashbrowns
1 can Cream of Chicken Soup
1 cup Sour Cream
2 tablespoon butter, melted
1 cup shredded Cheddar Cheese, divided
1/4 cup Milk
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1/4 teaspoon cayenne

In a large bowl, stir together the potatoes, soup, sour cream and butter. Add in 1/2 cup cheese. Stir in milk and seasonings. Transfer to a baking dish, cover with foil and bake at 350* for one hour. Sprinkle with remaining cheese and bake uncovered for another 15 minutes.

Fall Break

Today I cleaned the office while Aaron was at work. When he got home, we headed out to dinner at TGIFriday's. It's been a while since we've dined out together. Ran a few errands and now we're home.

Tomorrow, we're heading up to the lake house and outlet malls. I'm taking a meal to my parents who are already at the lake - Loaded Baked Potato Soup, biscuits, salad and pumpkin pie. I'm looking forward to it!

Monday and Tuesday I have off from school for Fall Break. I have some homework, housework and painting to finish up.

Fall!

We're having chili, cornbread and pumpkin pie for dinner. I love cold weather meals! Yum.

1 bottle BBQ Sauce

Cheddar Cheese, shredded

Assemble and bake according to directions. Yum!

Today

I have baked :: one cherry pie and two batches of chocolate chip cookies.
I have cooked :: one delicious dinner - steak, potatoes, corn and pie for dessert.
I have organized :: one pantry, four cupboards and one bedroom.
I have also showered, taken the dog to the vet, and went grocery shopping.

I feel somewhat accomplished. I am dreading next week. Not ready to go back to school. Not ready for new schedules. Just plain not ready.

Puff Pancakes

2 tablespoons Butter
3 Eggs
1/2 cup Milk
1/2 cup Flour
1/4 teaspoon Salt

Preheat your oven to 400 degrees. In a casserole dish, melt Butter (in the oven while it is warming up). Beat eggs and add in Milk, Flour and Salt. Beat until the mixture is smooth. Pour into the baking dish. Bake for 25 minutes or until the edges are puffy and the center is done. Serve with Fresh Fruit, Syrup, Powdered Sugar or whatever you'd like!
